That depends on your needs. as you can see from the comparison linked below, they all get roughly the same mileage efficiency (32-34 mpg) and all cost approximately the same ($25,000-$26,000). the escape hybrid is larger than the other 2, while the camry and altima will have better acceleration. i would suggest test driving all three and seeing which you prefer, because economically and environmentally they are all approximately equal.
