Can anyone tell me how to convert my mondeo estate into a seven seater, and if you know anywhere that does it?

I have been told that due to eec regulations you are not allowed to have booster seats in rear facing car seats, which bench seats are. so can i do it or not. what does the law say and what can they do if i go ahead and have it done regardless? i live in southend on sea essex
